The almost lunar light and immensity of the lake with its special energy are the roots of Chef María Fé García’s inspiration in creating Titilaka’s menu. Featuring numerous Andean ingredients and, of course, many Peruvian staples, all with a delicate twist define the Titilaka cuisine. As any visitor to the world’s highest navigable lake knows, that sublime sense of incorporeal fragility is hard to put into words. But María Fé has, after much experimenting with how ingredients respond at altitude, managed to put it on a plate.
